Bunny's Famous Waffle Recipe
Bunny’s Famous Waffle Recipe
2 Eggs
1 ¾ cups Milk
1 teaspoon Almond Extract
½ cup margarine, melted butter, or vegetable oil
2 cups all-purpose Flour
4 teaspoons Baking Powder
1 ½ tablespoon Sugar
½ teaspoon salt
Heat waffle iron. Beat eggs with hand beater until fluffy; beat in the remaining ingredients just until smooth. Pour batter from cup or pitcher onto center of HOT waffle iron. Bake until steaming stops, about 5 minutes. Remove waffles with fork.
Makes three 10” waffles
Mix is best when made a day prior to cooking.

Spinach Balls
• 2 (10 ounce) packages frozen chopped spinach, thawed and drained
• 2 cups Italian-style seasoned bread crumbs
• 1 cup grated Parmesan cheese
• 1/2 cup butter, melted
• 4 small green onion, finely chopped
• 4 eggs, lightly beaten
• salt and pepper to taste

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium bowl, mix the frozen chopped spinach, Italian-style seasoned bread crumbs, Parmesan cheese, butter, green onion, eggs, salt and pepper. Shape the mixture into 1 inch balls.
3. Arrange the balls in a single layer on a large baking sheet. Bake in the preheated oven 10 to 15 minutes, until lightly browned.
If you like spinach, you will love these!

Lightly Fried Chicken
LIGHTLY FRIED CHICKEN
• Slice the chicken breasts into strips.
• Have one bowl with flour seasoned with salt and pepper
• One bowl with 2 eggs beaten with a tsp. of water
• One bowl with Italian seasoned bread crumbs about 1 and 1/2 cups mixed with 3/4 of a cup of parmesan cheese.
• Dredge chicken in flour; dip in egg, then into crumbs pressing lightly so the crumbs adhere.
• Have a saute pan over med.heat with a T. of butter and ¼ cup of extra virgin olive oil mixed together.
• Brown chicken strips on all sides till cooked thru. About 3-4 minutes a side. Add more butter and olive oil as needed. You can keep them warm on a cookie sheet in the oven at 200 degrees.
*This chicken is very light and good.
